Somewhere between a crepe and a pancake these amazing breakfast treats are similar to a Dutch pancake and are not to be missed!
- 1 cup oat flour
- 1 cup yucca flour (try chickpea if you can't find yucca but the flavour may suffer)
- 2 Tbsp Essential Living Foods superfood smoothie addition (optional)
- 1 Tbsp chia seeds
- 1 Tbsp hemp seeds
- 1 Tbsp maple syrup
- 4 Tbsp coconut oil
- 2 cups almond milk
Mix flours and superfood smoothie mix.
In a pot warm the coconut oil, chia, hemp, maple syrup and milk until coconut oil is liquified. Allow liquid mixture to sit for 10 minutes.
Combine the dry ingredient with wet and pour 1/2 cup into a hot, lightly oiled pan.
Move the pan around to coat the surface with batter. Flip once the pancake has cooked through entirely.
