Roasted Kale and Veg

The simplest and most delicious way to enjoy veg. 

  •  
  • 1 head kale
  • 8 mushrooms
  • 1/2 red pepper
  • 1/2 red onion
  • 2 cloves garlic
  • 1 small zucchini
  • 2 Tbsp olive oil
  • pinch each, salt and pepper


Preheat oven to 400 degrees. Slice all vegetables and tear kale into bite size pieces. Drizzle all of the veggies with oil and massage the kale. Place othe vegetable mix on a baking sheet, sprinkle with salt and pepper. Roast for 8-12 minutes or until kale is slightly crisped and vegetables are cooked but still crisp!
