Tahini and Hummus Quinoa Bowl

Simple meals start with great ideas. This quinoa bowl is an easy way to get a lot of nutritious foods and incredible flavours in one bowl. 

Serves 2

  • 1.5 cups cooked quinoa
  • 1.5 cups cooked lentils
  • 1 Tbsp olive oil
  • 1 red onion, sliced
  • 1 sweet potato, thinly sliced
  • a bushel of asparagus, stems removed
  • 5-6 large cremini mushrooms, cleaned
  • 1 large carrot, julienned
  • 1 red pepper, julienned2 heaping tablespoons hummus


Dressing

  • 2 Tbsp Tahini
  • 2 Tbsp water
  • 1 tsp maple syrup
  • 1/4 tsp garlic powder
  • 1 tsp hot sauce

Preheat the oven to 400 degrees. Place the sliced sweet potato in a baking sheet and toss with 1/2 Tbsp olive oil. Bake for 30 minutes or until softened. 

In a separate baking sheet, toss the onion, asparagus and mushrooms in the remaining oil and add to the oven for the final 15 minutes. 

In a separate bowl, mix the dressing. 

Place cooked lentils, quinoa, cooked vegetables, carrots and peppers in a large bowl and drizzle with sauce.
