Immunity Salad

This cooling salad has all of the components to help your body fight off illness. Rich in vitamin C, antioxidants and plant powered protein, our Immunity Salad is a fantastic addition to your week day lunches. 

Serves 2-4 people

  • 3/4 cup organic quinoa
  • 1 & 1/2 cups water
  • 1/2 small beet, thinly sliced
  • 1/4 cup spinach, chopped
  • 1/4 cup basil, chopped
  • 1/4 cup arugula, chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup carrots, chopped
  • 1/4 cup yellow peppers, chopped.

Dressing

  • 1 tsp EACH of grapefruit juice, orange juice and lime juice.
  • 1 Tbsp olive oil
  • 1/2 tsp honey
  • 1/4 tsp grated ginger
  • 1/4 tsp smashed garlic

Place 1 & 1/2 cups of water in a saucepan over high heat. Once it is boiling, add dried quinoa, reduce heat and simmer for 15 minutes or until water is absorbed. Allow to cool. Meanwhile prepare vegetables and combine with the quinoa. Mix dressing ingredients and pour over salad. Toss lightly, season with salt & pepper.
