This recipe is simple and satisfying fusion of a quiche and Spanish tortilla. Using easily available ingredients you can create a delicious meal for any time of the day in under 30 minutes. With half a dozen organic eggs and a variety of fresh vegetables, what better way to satisfy your protein craving with the ovo-vegetarian meal.
- 1 whole grain, gluten-free or ezekiel tortilla
- 1 tsp olive oil
- 6 eggs
- 2 Tbsp chopped red pepper
- 2 Tbsp chopped red onion
- 2 Tbsp chopped basil
- 4 Tbsp chopped arugula
- salt & pepper
Preheat your oven to 350 degrees f. Oil a small, 9" cake pan and place your tortilla inside. Pierce the tortilla with a fork and place in the oven for 3 minutes or until lightly crisp.
Meanwhile, whisk together eggs and add peppers, onion, basil and arugula. Pour into slightly crisped tortilla shell and bake for 20 minutes or until cooked through. Season with salt and pepper.
Allow to cool before slicing. Serve with a salad.
