Banana Almond Chocolate Chip Muffins

These muffins have a unique crunch and amazing fluffy texture. They are packed with protein, omegas and will help you make it through a long afternoon at work. Perfect for a pre workout snack, the energy in these tasty gems will have you running back for more!

Makes 24 mini muffins or 12 large muffins

Wet Ingredients

  • 2 Tbsp honey
  • 2 bananas
  • 3/4 cup almond butter
  • 1/4 cup almond oil
  • 3/4 almond milk

Dry Ingredients

  • 2 Tbsp chia seeds
  • 2 Tbsp psyllium fibre
  • 1/2 cup buckwheat grouts
  • 1/2 cup hemp seeds
  • 1 cup almond flour
  • 1/4 tsp baking soda
  • Chocolate chips

Preheat oven to 375 degrees.

Place the wet ingredients in a large bowl and mix to combine. In a separate bowl combine all dry ingredients with the exception of the chocolate chips. Slowly add the dry ingredients to the wet. Once combined add the chocolate chips. For mini muffins, place 2 Tbsp of batter into an oiled muffin tin. For large muffins, place 4 Tbsp of batter into an oiled muffin tin.

Bake at 375 degrees for 10-12 minutes for mini muffins or for 20-24 minutes for large muffins.

Allow to cool & enjoy!
