Hemp and Almond Pancakes
Sunday brunch in bed in one of the best possible things to do on the weekend. Snuggly up with a hot cup of coffee (or tea) and ignoring potential maple syrup spills while digging into a healthy and wholesome breakfast is exactly how you should spend a Sunday. This meal is intended for two and includes a cup of pineapple, 4 eggs over easy, coffee, tea and our amazing hemp pancakes with organic maple syrup. Sunday mornings don't get better than this.
What is your Sunday morning routine?
- 2 cups ground oats (purchase these or simply grind gluten-free oats in a food processor)
- 1/2 cup hemp seeds
- 1 tsp baking soda
- 2 Tbsp hemp protein
- 3 Tbsp almond butter
- 1 banana, mashed
- 1 & 1/2 cups almond milk
Mix ground oats, hemp seeds, hemp protein and baking soda together in a bowl. In a separate bowl, mash the banana and add the almond butter and almond milk. Gently combine the two bowls until a thick batter forms. Heat almond (or coconut) oil in a pan over medium heat. Spoon 1/4 cup of batter into the pan and wait until bubbles appear over the surface of the pancake. Flip and cook for an additional two minutes. Serve with maple syrup.
