Vegan Hemp Falafel Wraps

These wraps are incredibly delicious and totally filling. They are awesome for a road trip, picnic or for your packed lunch. With roasted sweet potato and home made hemp falafels, you will not regret taking the time to create this masterpiece. 

Makes 6 servings

  • 6 large tortillas (gluten-free, whole grain or brown rice)

Hemp Falafels

  • 1/2 cup hemp seeds
  • 1/4 cup onion, finely diced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1/2 tsp paprika
  • 1 tin of chickpeas, drained and rinsed
  • salt and pepper

Roasted Sweet Potatoes

  • 1 large sweet potato, washed and chopped into 1" cubes
  • 1 Tbsp olive oil
  • 1/8 tsp paprika
  • salt and pepper

Veggie Fillings

  • 1 red pepper, thinly sliced
  • 1/2 cup red cabbage, thinly sliced
  • 1/2 cup lettuce
  • 1/2 cup red onion, thinly sliced
  • 1 avocado, sliced into 12 slices
  • 6 Tbsp mango chutney
  • 12 Tbsp garlic hummus

Preheat oven to 350 degrees. 

Place the sweet potato on a baking sheet and coat in oil. Sprinkle with paprika, salt and pepper. Place in a hot oven for 40 minutes. 

Meanwhile, place the chickpeas in a food processor with the onion. Process the mixture until it becomes a dough. Add the coriander, cumin, garlic, paprika and parsley and process for another minute. Remove from the food processor and stir in the hemp seeds. 

Roll the dough into single pong pong size balls. Place on a lightly greased baking sheet and bake at 350 degrees for 20 minutes, flipping halfway through the cooking time. 

To build your wrap, top each with 2 Tbsp hummus, peppers, cabbage, lettuce, onion, 1 Tbsp mango chutney, sweet potato and falafels. Fold each end of the wrap and roll tightly.
