Raw Vegan Brownies

This is a decadent recipe for a healthy brownie that everyone will fall in love with. Grain, gluten, sugar, dairy, egg and refined flour-free, you can't go wrong with something as rich and totally nutritious as this amazing brownie!

Brownies

  • 1 cup raw walnut pieces
  • 1/2 cup raw almond pieces
  • 1/2 cup raw peanuts
  • 2 cups pitted dates
  • 3/4 cup cacao powder

Topping

  • 1 cup vegan chocolate chips
  • 2 Tbsp peanut butter
  • 1 tsp vanilla

Supplies:

  • Food processor
  • Baking sheet
  • Parchment or wax paper

 

Instructions:

Place the three types of nuts into the food processor and grind until a powder consistency is achieved. Add the cocoa and pulse until combined. Turn on the food processor and add the dates, one by one until the mixture is doughy and sticky.

Remove mixture from the processor and press into a pan that has been lined with parchment paper or wax paper. Place in the freezer while you make the topping.

For the topping, chocolate in a double boiler over high heat. Melt the chocolate entirely and add the peanut butter and vanilla. Stir to combine. Pour over the hardened brownie base and return to the freezer until hardened. Slice with a sharp knife and store in the fridge or freezer for up to 2 weeks.
