Vegan Chilli

There is nothing better on a cold afternoon than a hot bowl of hearty chilli. You don't need meat to make it hearty, although vegan sausage can definitely spice it up a bit. Try this recipe the next time you are craving a warm, stick to your ribs kind of meal. 

  • 2 teaspoons olive oil
  • 1 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1/2 cup diced tomatoes
  • 1/2 cup diced celery
  • 2 teaspoons garlic, minced
  • 1 jar tomato sauce
  • 2 teaspoons chilli powder
  • 2 teaspoons ground cumin
  • 1/4 teaspoon black pepper
  • 1 jar garbanzo beans, rinsed and drained
  • 1 can red kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 4, field roast vegan organic Italian sausages (optional)
  • 1 cup organic vegetable broth
  • 2 cups tomato sauce
  • 1/4 cup chopped fresh cilantro

Heat olive oil in a large saucepan over medium-high heat. Add onion, tomatoes, bell pepper, celery, tomatoes and garlic to pan. Sauté 3 minutes. Meanwhile, cook the vegan sausage in a frying pan over medium heat. Once prepared, add the sausage to the saucepan. Stir in vegetable broth. Bring to a boil. Reduce heat, add tomato sauce and all spices and seasoning. Remove from heat, stir in cilantro.
