Chocolate Chip Vanilla Cake

Our chocolate chip banana cake is incredibly moist, completely vegan and is topped with our incredible chocolate almond spread. This recipe is also gluten-free to satisfy anyone with allergies and sensitivities. 

  • 2 cups almond milk
  • 2/3 cup coconut oil
  • 2 tsp vanilla
  • 2 bananas, mashed
  • 2 tsp white or apple cider vinegar
  • 1 cup honey
  • 2 cups amaranth flour
  • 1/2 cup coconut flour
  • 1/2 cup tapioca flour
  • 1 cup chocolate chips
  • 2 tsp baking soda

Preheat oven to 350 degrees. 

In a large bowl, combine the almond milk, coconut oil, vanilla, bananas, apple cider vinegar and honey. In a separate bowl, mix the flours and baking soda. Slowly incorporate the dry ingredients into the wet. Mix in the chocolate chips. 

Grease a 9 inch round cake pan and pour the batter in. Bake for 30 minutes or until cooked through. 

Allow to cool and ice using our chocolate almond spread.
