Whole Grain Breakfast Loaf

This whole grain breakfast loaf is packed with fibre, protein and a ton of nutrients. It is completely gluten, dairy and yeast free and goes amazingly with any meal or as a crumbly sandwich bread. 

  • 2 cups gluten-free flour
  • 1 cup buckwheat flour
  • 1 & 1/2tsp baking soda
  • 1/2 cup hemp seeds
  • 1/4 cup chia seeds
  • 3/4 cups almond milk
  • 5 eggs
  • 1 cup coconut shortening (we recommend Nutiva shortening), softened
  • 2 tsp apple cider vinegar
  • 1 tsp salt

Preheat the oven to 350 degrees. In a small bowl combine the chia seeds and almond milk. Let sit for 10 minutes. In a large bowl combine flour, buckwheat, baking soda, salt and hemp seeds. Crack the eggs into the chia mixture. Add the shortening and apple cider vinegar to the chia mixture and stir to combine. Pour the wet ingredients into the dry and mix well until the dough comes together. Place in a greased bread pan and bake for 40 minutes or until cooked through.
