Thai Mango Salad with Coconut Peanut Dressing
This salad is surprisingly simple and incredible delicious. The mixture of fresh vegetables, mango, peanut sauce and a touch of mint brings together amazing Asian flavours. Enjoy as a lunch, side dish or for a special occasion.
- 1 large mango, sliced
- 1 onion, thinly sliced
- 1 small green pepper, julienned
- 1 orange or red bell pepper, julienned
- 1 carrot, julienned
- Sprig of fresh mint or cilantro
- 1 can coconut milk
- 1 tsp hot sauce or sriracha
- 1/2 cup peanut butter
- 2 Tbsp soy sauce
- Juice of 2 limes
- 1 Tbsp rice vinegar
- 1 tsp honey
- 1 tsp fresh ginger
- 1 clove garlic
Mix all fruits and vegetables together in a large bowl.
Place all dressing ingredients in a blender and mix until completely pureed. Pour dressing over the salad and enjoy!
