Sweet Potato, Quinoa Pizza

So perhaps by normal standards this isn't a pizza but rather a casserole. None the less, the awesome italian flavours and fluffy crust make for a delicious meal. 

Crust

  • 1 sweet potato, baked, flesh removed
  • 1 cup quinoa, cooked
  • 1 cup almond flour
  • 1/4 psyllium fibre
  • 1 tsp garlic powder
  • 1 tsp salt
  • pinch black pepper
  • 1 tsp olive oil 

Toppings

  • 3 artichoke hearts
  • 5 stalks of asparagus
  • 1/2 red onion, sliced
  • 1 portabello mushroom, sliced
  • 1/4 cup tomato sauce
  • 1 Tbsp olive oil

Preheat oven to 400 degrees f. In a large bowl, mix together all of the ingredients for the pizza crust. Press the crust into a greased pizza pan or pie plate and bake at 400 degrees for 10 minutes. At the same time, cover a baking sheet with all of the toppings (and additional toppings of your choice), sprinkle with salt and pepper and olive oil. Bake for 20 minutes or until the asparagus is cooked through and the other vegetables are softened. 

Remove the crust from the oven and spread with tomato sauce. Top with roasted vegetables and return it to the oven for 15 minutes. 

Allow to cool slightly before attempting to remove it from the pan.
