Enjoy this refreshing summer recipe with roasted tofu, grilled salmon or poached chicken. 

Makes 4 servings:

  • 1 head kale, washed and chopped
  • 1 red pepper, washed and julienned
  • 1 mango, peeled and julienned
  • 1 small cucumber, washed and julienned
  • 1 small red onion, washed and julienned
  • 1 carrot, thinly sliced

Dressing

  • Juice of 1 lime
  • 1 Tbsp rice vinegar
  • 1 tsp honey or agave
  • 1 tsp soy sauce
  • 1 clove of garlic, finely chopped
  • Pinch dried ginger
  • 1 tsp sesame oil
  • 2 Tbsp water
  • Salt and pepper to taste
