Asian Avocado and Almond salad

This is so much more than a salad. It is a So Fresh Fave recipe that offers a vegan hit of protein, fiber and some serious flavor. Even the salad skeptics will fall in love with this meal. 

Serves 2


  • 1 avocado, peeled and diced
  • 5 green onions, chopped
  • 1 cup white cabbage, thinly sliced
  • 2 cups fresh lettuce, chopped
  • 1 cup fresh broccoli, chopped
  • 1 large carrot, thinly sliced
  • 1 cucumber, thinly sliced
  • handful of fresh mint leaves
  • handful of chopped almonds


  • 1, 1/4" piece ginger, grated
  • 1 clove garlic, grated
  • ¼ cup rice vinegar
  • 4 Tbsp honey
  • 1 Tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp Sriracha
  • 2 Tbsp sesame seeds
  • 1/2 cup olive oil
  • salt and pepper to taste

    Toss together salad ingredients in a large bowl. In a separate bowl mix together all salad dressing ingredients and whisk until smooth. Drizzle 1-2 Tbsp of dressing over your salad. Enjoy!
