Vegan Peanut Butter Nanaimo Bars
Rich, chocolate squares that will not disappoint.
1/3 cup walnuts
1/3 cup almonds
2/3 cup shredded coconut
8-10 pitted dates
1/3 cup cocoa powder
Peanut Butter Layer
1 cup natural, unsweetened peanut butter
1/3 cup shredded coconut
2 Tbsp maple syrup
Top Chocolate Layer
1/2 cup cocoa powder
1/2 cup dark chocolate
1/3 cup maple syrup
1 Tbsp coconut oil
1/2 cup unsweetened almond milk
Place walnuts, almonds, cocoa powder and coconut in a food processor and process until a powder is formed. Add dates one at a time until a dough is created.
Press the dough into a 9" square pan. Chill for 30 minutes.
Mix all peanut butter layer ingredients together and gently spread over the bottom layer of the bars. Chill.
Finally, in a double boiler, begin to melt the chocolate, gently adding the coconut oil, maple syrup and milk. Once fully melted and well combined, begin adding the cocoa powder slowly. Stir into a creamy mixture. Spread over top of the peanut butter mixture.
