Sweet Curried Salmon
The salmon is super easy, amazingly flavourful and totally filling. Serve with a fresh salad for a perfect weeknight meal that is packed with omegas. Serves Two.
1 tsp green curry paste
1 tsp coconut oil
1 Tbsp sweet chilli sauce
2, 4oz piece wild Atlantic salmon filets
Mix 1 tsp green curry paste with 1 tsp coconut oil and cover the top (skin side down) of your salmon with the mixture. Heat a pan to medium and place the salmon, skin side up. Cover and cook for 4 minutes. Flip the salmon and drizzle with sweet chilli sauce. Cover and cook for an additional 3-4 minutes.
