Tofu & Veggie Five Minute Scramble

1 package, firm silken tofu
5 stalks of asparagus
4 cremini mushrooms
1/4 cup red peppers
pinch each salt & pepper
1 tsp olive oil

Heat olive oil in a large pan over medium heat. Add vegetables and sautée until softened (approximately 5 minutes) add tofu and break apart as it cooks. Allow it to brown and cook through. Sprinkle with salt and pepper. Serve hot.
